  • 1/3 cup maple syrup or honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 medium apple, grated
  • 1/2 cup grated carrot
  • 1/4 cup chopped walnuts or pecans (optional)
  • 2 tablespoons coconut oil or melted butter

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.
  2. Mix dry ingredients: In a large bowl, whisk together oats, baking powder, cinnamon, nutmeg, and salt.
  3. Combine wet ingredients: In another bowl, whisk milk, maple syrup or honey, eggs, vanilla extract, and melted coconut oil or butter.
  4. Combine mixtures: Stir the wet mixture into the dry ingredients until well combined.
  5. Add mix-ins: Fold in grated apple, grated carrot, and nuts if using.
  6. Bake: Pour the mixture into the baking dish and bake for 35–40 minutes until set and golden brown.
