Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang on the sides for easy removal. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly and evenly into the bottom of the prepared pan. Bake for 8 to 10 minutes, then remove and let it cool slightly.
  2. Make the cheesecake layer: While the crust is baking, beat softened cream cheese and sugar together in a large bowl until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract thoroughly. Pour the cheesecake batter over the cooled crust and spread evenly.
  3. Add the apple layer: In a separate small bowl, toss the finely diced apples with sugar and ground cinnamon until coated uniformly. Sprinkle the apple mixture evenly over the cheesecake layer.
