Ingredients
Scale
Vegetables and Aromatics
- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- ½ small red onion, diced
- 3 cloves garlic, minced
- 1 cup chopped baby spinach
Dairy
- 8 ounces feta cheese
- 4 large eggs
Seasonings and Oils
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon red pepper flakes
Optional Garnish
- Chopped fresh basil or chives
Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) to ensure it reaches the correct temperature for baking the vegetables and eggs evenly.
- Prepare the Base: In an oven-safe dish, mix together the cherry tomatoes, diced red bell pepper, diced red onion, and minced garlic. Place the block of feta cheese in the center of the vegetables and drizzle everything with olive oil.
- Season the Dish: Combine the dried oregano, sea salt, dried thyme, ground black pepper, and red pepper flakes. Sprinkle this seasoning blend evenly over the vegetables and feta cheese to build flavor.
- Bake Vegetables & Feta: Place the dish in the preheated oven and bake for 25 minutes, or until the vegetables are tender and the feta cheese has softened and started to brown slightly.
- Add Spinach: Carefully remove the dish from the oven and stir the chopped baby spinach into the baked vegetables, allowing the heat to lightly wilt the spinach.
- Add the Eggs: Using a spoon, create four small wells in the vegetable and feta mixture. Crack one egg into each well, spacing them evenly across the dish.
- Final Bake: Return the dish to the oven and bake for an additional 10 minutes. Bake until the egg whites are fully set but the yolks remain runny, adjusting the time slightly based on your preferred egg doneness.
- Garnish & Serve: Remove from the oven and sprinkle with chopped fresh basil or chives if desired. Serve the baked feta eggs warm, ideally with crusty bread to soak up the flavorful juices.
Notes
- You can experiment with different types of cherry tomatoes for varied sweetness and texture.
- Adjust red pepper flakes to your taste for more or less heat.
- To make the yolks firmer, bake for an additional 2-3 minutes in the final baking step.
- This dish pairs wonderfully with toasted sourdough or baguette slices.
- Use a ceramic or glass oven-safe dish for even cooking.
