- 1 ½ cups long-grain white rice (rinsed)
- 2 cups low-sodium chicken or vegetable broth
- ½ cup coconut milk or water
- 1 tablespoon olive oil or butter
- 1 small onion (diced)

- 1 teaspoon paprika
- ½ teaspoon dried thyme
- Salt and black pepper to taste
Fish:
- 4 white fish fillets (such as cod, tilapia, or haddock)
- Juice of ½ lemon
- 2 tablespoons chopped fresh parsley
- Lemon wedges for serving
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Prepare the rice: In a large oven-safe baking dish, combine rinsed rice, broth, coconut milk, olive oil, onion, garlic, paprika, thyme, salt, and pepper. Stir to combine.
