Instructions

  1. Preheat the oven: Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil to prevent leaks.
  2. Make the crust: In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the pan. Bake for 8–10 minutes, then remove and let cool.
  3. Make the filling: In a large bowl, beat the cream cheese until smooth. Add mashed bananas and brown sugar and beat until well combined. Mix in the sour cream, vanilla, cinnamon, and salt. Add eggs one at a time, mixing on low speed just until incorporated—do not overmix. Pour the filling into the cooled crust and smooth the top.
  4. Bake: Bake for 55–65 minutes, or until the center is slightly jiggly but set around the edges. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour. Then refrigerate for at least 4 hours or overnight.
  5. Before serving: Top with chopped nuts and drizzle generously with caramel sauce. Add fresh banana slices and whipped cream if desired.
