Description

Banana Mochi Rolls are a delightful Japanese-inspired dessert made with glutinous rice flour and mashed ripe bananas. These soft, sticky mochi treats are easy to prepare using a microwave, filled with fresh banana slices for a naturally sweet, chewy snack. Perfect for a quick treat or a unique dessert experience, they combine the subtle sweetness of bananas with the chewy texture of mochi, making them irresistible.

Ingredients

Scale

Dough

  • 1 cup glutinous rice flour (mochiko)
  • ¾ cup whole milk or coconut milk
  • ¼ cup granulated sugar
  • 1 ripe banana, mashed
  • 1 teaspoon vanilla extract

For Dusting

  • ½ cup cornstarch or potato starch

Filling

  • 12 additional ripe bananas, sliced into small pieces

Instructions

  1. Mix Ingredients: In a microwave-safe bowl, whisk together the glutinous rice flour, milk, sugar, mashed banana, and vanilla extract until the mixture is smooth and free of lumps.
  2. First Microwave Cook: Cover the bowl loosely with plastic wrap or a microwave-safe plate. Microwave on high for 2 minutes.
  3. Stir and Continue Cooking: Remove from microwave and stir the mixture thoroughly. Microwave again for another 1 to 2 minutes until it thickens, becomes sticky, and slightly translucent.
  4. Cool Slightly: Let the mochi dough cool enough to handle but remain pliable.
  5. Prepare Surface: Dust a clean surface or parchment paper generously with cornstarch or potato starch to prevent sticking.
  6. Roll Out Dough: Transfer the mochi dough onto the dusted surface. Dust the top with more starch, then gently roll the dough to about ¼-inch thickness.
  7. Cut Squares: Using a knife, cut the rolled dough into 3×3-inch squares.
  8. Add Filling: Place a small piece of sliced banana in the center of each square.
  9. Seal Mochi: Fold the dough over the banana filling, pinch the edges to seal tightly, then roll gently in your hands to form a smooth ball or log shape.
  10. Final Dusting and Serve: Lightly dust the finished mochi rolls with more starch and serve immediately for best texture and freshness.

Notes

  • Best enjoyed fresh on the same day for optimal texture and flavor.
  • For a richer treat, add a small square of dark chocolate along with the banana filling.
  • Store any leftovers in an airtight container at room temperature for up to 1 day; refrigerating can harden the mochi texture and affect chewiness.
