  • 8 ounces mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth

  • ½ cup sour cream
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Prepare the Beef: In a large skillet over medium-high heat, heat the olive oil. Add the beef in a single layer and sear for 1 to 2 minutes per side until just browned. Remove from the skillet and set aside.
  2. Make the Mushroom Sauce: In the same skillet, reduce heat to medium and add butter. Sauté the onions for 2 to 3 minutes until softened, then add the garlic and mushrooms. Cook for 5 to 6 minutes until the mushrooms are browned and have released their moisture.
  3. Create the Sauce: Sprinkle the flour over the mushroom mixture and stir to coat. Slowly pour in the beef broth while stirring, followed by Worcestershire sauce and Dijon mustard. Simmer for 5 to 7 minutes, or until the sauce thickens slightly.
  4. Finish the Dish: Return the seared beef and any juices to the skillet. Reduce heat to low and stir in the sour cream until well combined and warmed through. Season with salt and pepper to taste.
  5. Serve: Serve hot over egg noodles or rice, and garnish with chopped parsley.
