Chili:

- 1 can (15 oz) diced tomatoes
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1½ tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional)
- 1 cup beef broth or water
Instructions
- Heat olive oil: Heat olive oil in a large pot over medium heat.
- Cook onion and garlic: Add chopped onion and cook until soft. Stir in garlic and cook for 1 minute.
- Add ground beef: Cook ground beef until browned, breaking it up with a spoon.
- Combine ingredients: Add bell peppers, tomato paste, tomatoes, beans, broth, and spices. Bring to a simmer.
- Simmer: Reduce heat and simmer for 30–40 minutes until thickened.
- Adjust seasoning: Taste and adjust seasoning if needed.
