  • 1 pound baby potatoes (halved)

Seasonings and Liquids:

  • 2 tablespoons tomato paste
  • 1 cup red wine (optional)
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves

Instructions

  1. Preheat and Season: Preheat the oven to 300°F. Season chuck roast with salt and pepper.
  2. Sear the Roast: Sear the roast in olive oil until browned. Remove and set aside.
