- 1 can (15 ounces) kidney beans, drained and rinsed

- 1 can (14.5 ounces) diced tomatoes
- 1 can (10 ounces) diced tomatoes with green chiles
- 2 cups beef broth

- 1/2 cup shredded cheddar cheese

- 2 tablespoons chopped fresh cilantro
Instructions
- Brown the Beef and Sauté Onion: In a skillet over medium heat, cook the ground beef and diced onion until the beef is fully browned and the onion has softened, stirring occasionally to break up the meat.
- Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant without burning.
- Drain Excess Grease: Remove the skillet from heat and drain any excess grease from the beef and onion mixture to avoid a greasy soup.
- Transfer to Slow Cooker: Place the cooked beef mixture into your slow cooker pot, evenly distributing it.
- Add Remaining Ingredients: Add the taco seasoning, drained black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chiles, beef broth, tomato paste, cumin, chili powder, salt, and black pepper. Stir well to combine all ingredients thoroughly.
- Cook the Soup: Cover the slow cooker with its lid and cook on low for 6 to 7 hours or on high for 3 to 4 hours, allowing the flavors to meld and intensify.
