  • 1/4 cup sour cream
  • 1 lime, cut into wedges

Instructions

  1. Prepare the Masa Dough: In a bowl, combine the masa harina, warm water, salt, and 1 tablespoon vegetable oil. Mix until a soft, pliable dough forms.
  2. Shape the Sopes: Divide the dough into 8 equal portions and roll each into a ball. Flatten each ball into a thick disk approximately 3 inches in diameter.
  3. Cook the Sopes: Heat vegetable oil in a skillet over medium heat. Fry the sopes for 2 to 3 minutes on each side until they turn lightly golden and firm enough to handle.
  4. Form the Edges: Remove sopes from the skillet and, while still warm, gently pinch the edges of each to create a raised border that will hold the toppings.
  5. Add the Toppings: Spread a layer of warm refried beans on each sope, then top with shredded brisket. Sprinkle crumbled queso fresco, diced red onion, and chopped cilantro over the top.
  6. Finish and Serve: Drizzle with sour cream and serve immediately with lime wedges on the side for squeezing over the sopes.
