Ingredients

Scale

Rice Mixture:

  • 2 cups cooked white or brown rice
  • 2 cups chopped steamed broccoli (fresh or frozen)
  • 1 tablespoon butter
  • ½ cup chopped onion
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 1½ cups shredded cheddar cheese (divided)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Topping:

  • ½ cup crushed Ritz crackers or breadcrumbs (optional)
  • 1 tablespoon melted butter

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch or similar-sized baking dish.
  2. Sauté Onion: In a skillet over medium heat, melt butter and sauté the chopped onion until soft and translucent, about 4–5 minutes.
  3. Mix Ingredients: In a large mixing bowl, combine the cooked rice, steamed broccoli, sautéed onion, cream of mushroom soup, sour cream, 1 cup of the shredded cheddar cheese, garlic powder, salt, and pepper. Stir until everything is evenly combined.
  4. Prepare Casserole: Transfer the mixture to the prepared baking dish and spread it evenly. Top with the remaining ½ cup of cheddar cheese.
  5. Add Topping: If using a cracker or breadcrumb topping, mix the crushed crackers or breadcrumbs with melted butter and sprinkle evenly over the top.
  6. Bake: Bake for 25–30 minutes, or until the casserole is hot and bubbly and the top is golden. Let cool slightly before serving.

Notes
