Pasta and Vegetables

  • 12 oz fettuccine or pasta of choice
  • 2 cups broccoli florets

Shrimp

  • 1 lb shrimp (peeled & deveined)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper

Sauce

  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp olive oil

Garnish

  • Fresh parsley, for garnish
  • Extra Parmesan cheese (optional)


Instructions

  1. Cook Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. During the last 2 minutes of cooking, add the broccoli florets to the boiling water. Once done, drain both pasta and broccoli and set aside.
  2. Cook Shrimp: Heat olive oil in a large skillet over medium-high heat. Add the shrimp and season with salt and pepper. Cook the shrimp for 2-3 minutes per side until they turn pink and opaque. Remove shrimp from the skillet and set aside.
  3. Melt Butter and Sauté Garlic: In the same skillet, reduce heat to medium and melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned.
  4. Make Alfredo Sauce: Pour in the heavy cream and add garlic powder, onion powder, salt, black pepper, and red pepper flakes if using. Stir the mixture and let it simmer gently for 3-4 minutes until slightly thickened.
  5. Add Parmesan Cheese: Stir in the grated Parmesan cheese gradually until the sauce becomes smooth and creamy.
  6. Combine and Toss: Add the cooked pasta, broccoli, and shrimp back to the skillet. Toss everything gently to coat all ingredients evenly with the Alfredo sauce.
  7. Garnish and Serve: Sprinkle fresh parsley and extra Parmesan cheese on top for garnish. Serve the Broccoli Shrimp Alfredo warm and enjoy!

  • You can substitute fettuccine with any pasta of your choice, like linguine or penne.
