Description

Deliciously moist and flavorful Brown Sugar Banana Muffins are a perfect way to use up ripe bananas. These easy-to-make muffins are a great breakfast or snack option that everyone will love.

Ingredients

Scale

Wet Ingredients:

  • 3 ripe bananas (mashed)
  • ½ cup brown sugar (packed)
  • ¼ cup granulated sugar
  • ½ cup unsalted butter (melted and slightly cooled)
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon (optional)
  • ¼ teaspoon salt

Topping (Optional):

  • Coarse sugar or chopped nuts

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with liners or grease lightly.
  2. Mix wet ingredients: In a large mixing bowl, whisk together the mashed bananas, brown sugar, granulated sugar, melted butter, eggs, and vanilla until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon (if using), and salt.
  4. Combine wet and dry: Gently fold the dry ingredients into the wet mixture just until combined—do not overmix.
  5. Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle tops with coarse sugar or chopped nuts if desired.
  6. Bake: Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and enjoy: Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely or enjoy warm.
