Ingredients
Avocado:
2 ripe avocados (halved and pitted)
Bruschetta Filling:
1 cup cherry tomatoes (diced), 1/4 cup red onion (finely chopped), 2 tablespoons fresh basil (chopped), 1 garlic clove (minced), 1 tablespoon balsamic vinegar, 1 tablespoon olive oil, salt and black pepper to taste, shaved Parmesan cheese for topping (optional)
Instructions
- Prepare Bruschetta Filling: In a medium bowl, combine diced cherry tomatoes, red onion, basil, garlic, balsamic vinegar, olive oil, salt, and pepper. Let sit for 5–10 minutes to meld flavors.
- Prep Avocados: Scoop out a small portion of avocado halves to create room for filling. Dice scooped-out avocado and mix into tomato mixture.
- Fill Avocados: Spoon bruschetta filling into each avocado half. Top with shaved Parmesan if desired. Serve immediately.
