For the Nachos:

  • 1½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • â…“ cup sliced green onions
  • ¼ cup crumbled blue cheese or ranch dressing
  • 1 jalapeño (thinly sliced, optional)
  • ½ cup chopped celery (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Toss the chicken: In a bowl, toss the shredded chicken with the Buffalo sauce until well coated.
  3. Layer the nachos: Spread half the tortilla chips on the prepared baking sheet. Top with half the Buffalo chicken, cheddar, and mozzarella cheeses. Repeat with a second layer of chips, chicken, and cheeses.
  4. Bake: Bake for 8–10 minutes, or until the cheese is fully melted and bubbly. Remove from the oven.
  5. Add toppings: Sprinkle with green onions, blue cheese or ranch, and optional toppings like jalapeños or celery. Drizzle with extra sauce or dressing if desired.
