Instructions
- Sauté Vegetables: In a large pot, heat butter or oil over medium heat. Sauté onion, bell pepper, and celery until softened. Add garlic, Cajun seasoning, paprika, thyme, salt, and pepper.
- Cook Potatoes: Add potatoes and broth. Simmer until potatoes are tender.
- Add Sausage: Brown sausage separately and add to the soup if desired.
- Finish Soup: Stir in cream and cheese. Blend part of the soup for a creamier texture or mash some potatoes.
- Adjust and Serve: Adjust seasoning. Serve hot, garnished with green onions and cheese.
