Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • 4 tbsp butter, softened
  • 1 tsp vanilla extract
  • 4 cups powdered sugar


Instructions

  1. Preheat & Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan to prevent sticking.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, cinnamon, baking soda, baking powder, salt, ginger, and nutmeg until well combined.
  3. Prepare Wet Ingredients: In a large mixing bowl, beat the softened butter, sugar, and brown sugar together until the mixture becomes light and fluffy. Add the eggs one by one, mixing well after each addition, then stir in the vanilla extract.
  4. Combine & Fold: Gradually add the dry ingredients into the wet mixture, mixing just until incorporated. Gently fold in the shredded carrots to evenly distribute.
  5. Bake: Spread the batter evenly in the prepared pan. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.
  6. Make Frosting: In a bowl, beat the softened cream cheese, butter, and vanilla extract until smooth and creamy. Gradually add the powdered sugar and continue beating until the frosting is fluffy and spreadable.
