Dough:
- 2 cups all-purpose flour
- 3/4 cup plain yogurt
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon oil (plus more for cooking)
Cheese Filling:
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder (optional)
- Chopped parsley or cilantro for garnish (optional)
Instructions
- Dough Preparation: In a large bowl, combine the flour, baking powder, and salt. Add yogurt and oil, and mix until a soft dough forms. Knead for 5–6 minutes until smooth, adding a bit more flour if needed. Cover and let rest for 20 minutes.
- Cheese Filling: In a separate bowl, mix the mozzarella, cheddar, and garlic powder if using.
- Assembly: Divide the dough into 6 equal balls. Flatten each into a small circle, place 2–3 tablespoons of the cheese mixture in the center, and fold the edges over to seal. Gently flatten into a disc using your hands or a rolling pin.
- Cooking: Heat a skillet over medium heat and brush lightly with oil. Cook each flatbread for 2–3 minutes per side, or until golden brown and cheese is melted.
- Serving: Garnish with chopped herbs and serve warm.
