Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if needed.
  2. Add onion, carrots, and celery, and sauté for 4–5 minutes until softened. Stir in garlic, salt, pepper, basil, and paprika and cook for 1 minute more.
  3. Add potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  4. In a small bowl, whisk flour into the milk until smooth, then slowly stir into the soup. Cook for another 4–5 minutes, stirring often, until thickened slightly.
  5. Reduce heat to low and stir in shredded cheddar cheese until melted. Remove from heat and stir in sour cream until fully incorporated. Taste and adjust seasoning if needed. Garnish with parsley or green onions before serving.
