Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- Salt to taste
Sauce & Cooking
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup shredded mozzarella cheese (divided)
- 1/4 cup grated Parmesan cheese
Garnish
- Fresh parsley, chopped, for garnish
Instructions
- Season the Chicken: Season the chicken breasts evenly with paprika, black pepper, Italian seasoning, and salt to build flavor before cooking.
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 5 to 6 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- Sauté Mushrooms: In the same skillet, melt the butter. Add sliced mushrooms and cook them for 4 to 5 minutes until they become softened and lightly golden.
- Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, ensuring the garlic doesn’t burn.
- Make the Cream Sauce: Pour the chicken broth and heavy cream into the skillet, stirring well to combine. Allow the mixture to simmer for 3 to 4 minutes until it thickens slightly.
- Add Cheeses: Stir in the grated Parmesan cheese and half of the shredded mozzarella cheese into the sauce until melted and smooth.
- Combine Chicken and Sauce: Return the chicken breasts to the skillet, spoon the creamy mushroom sauce over them, and sprinkle the remaining mozzarella cheese on top.
- Finish Cooking: Cover the skillet and cook for an additional 5 to 7 minutes until the chicken is fully cooked through and the cheese on top is melted.
- Garnish and Serve: Sprinkle fresh chopped parsley over the dish before serving to add a bright and fresh finish.
Notes
- You can substitute heavy cream with half-and-half for a lighter sauce, but it will be less creamy.
- Use fresh mushrooms for the best flavor; button or cremini mushrooms work well.
- Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
- This recipe pairs beautifully with pasta, rice, or steamed vegetables.
- Leftovers can be stored refrigerated for up to 3 days and reheated gently on the stovetop.
