Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
Sauce:
- 3 cloves garlic, minced
- 3 cups cherry tomatoes, halved
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/4 cup chicken broth
- 1/4 cup chopped fresh basil
- 1/4 cup grated Parmesan cheese (optional)
Serving:
- cooked pasta or rice
Instructions
- Season the Chicken: Season both sides of the chicken breasts with salt, pepper, and garlic powder.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes per side, or until golden brown and cooked through. Remove chicken from the pan and set aside.
- Prepare the Sauce: In the same skillet, reduce heat to medium and add minced garlic. Cook for 30 seconds until fragrant, then stir in the cherry tomatoes and red pepper flakes (if using). Sauté for 3–4 minutes until tomatoes begin to soften. Add chicken broth and simmer for another 2 minutes, stirring occasionally.
- Combine and Serve: Return the chicken to the skillet and spoon the tomato mixture over the top. Simmer for another 2–3 minutes to allow flavors to combine. Remove from heat and sprinkle with fresh basil and Parmesan cheese if desired. Serve hot over pasta or rice.
Notes
- For extra richness, add a splash of cream or a pat of butter to the sauce before serving.
- This dish pairs wonderfully with angel hair pasta.
