Vegetables:
- 2 cups broccoli florets
- 1 red bell pepper, thinly sliced
- 2 cloves garlic, minced
Teriyaki Sauce:
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 1 tablespoon water
Instructions
- Cook the noodles: Prepare noodles according to package directions, drain, and set aside.
- Make the teriyaki sauce: Whisk together soy sauce, honey, rice vinegar, brown sugar, sesame oil, and cornstarch slurry. Set aside.
- Cook the chicken: Season chicken with salt and pepper, cook until browned, then set aside.
- Stir-fry vegetables: Cook broccoli and bell pepper, add garlic, then return chicken to skillet with noodles. Pour in teriyaki sauce and toss until coated.
- Serve: Top with sesame seeds or green onions.
