Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the Dough: In a large bowl, combine oats, chopped peanuts, melted coconut oil, honey or maple syrup, vanilla extract, and salt. Stir until a sticky dough forms.
- Shape the Cookies: Scoop about 1½ tablespoons of dough for each cookie, shape into balls, then flatten slightly. Arrange on the prepared baking sheet with space between each.
- Bake: Bake for 10–12 minutes, until the edges turn golden. Allow the cookies to cool completely on a wire rack.
- Dip in Chocolate: Dip half of each cooled cookie into melted dark chocolate and place on parchment. Sprinkle with chopped peanuts and let the chocolate set before serving.
