Ingredients

Rolled Oats:

1 ½ cups

Chopped Roasted Peanuts:

½ cup

Coconut Oil (melted):

¼ cup

Honey or Maple Syrup:

½ cup

Vanilla Extract:

1 tsp

Salt:

Pinch

Dark Chocolate (melted, for dipping):

4 oz

Finely Chopped Peanuts (for garnish):

2 tbsp

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the Dough: In a large bowl, combine oats, chopped peanuts, melted coconut oil, honey or maple syrup, vanilla extract, and salt. Stir until a sticky dough forms.
  3. Shape the Cookies: Scoop about 1½ tablespoons of dough for each cookie, shape into balls, then flatten slightly. Arrange on the prepared baking sheet with space between each.
  4. Bake: Bake for 10–12 minutes, until the edges turn golden. Allow the cookies to cool completely on a wire rack.
  5. Dip in Chocolate: Dip half of each cooled cookie into melted dark chocolate and place on parchment. Sprinkle with chopped peanuts and let the chocolate set before serving.

Notes

  • For a vegan version, substitute maple syrup for honey.
  • To enhance the flavor, lightly toast the oats before mixing.
  • Store cookies in an airtight container at room temperature for up to 5 days, or refrigerate for extended freshness.
