Description

This Cinn-A-Dew Pop Bread is a delightful quick bread with a unique twist of cantaloupe (or honeydew melon), warm spices, and a sweet topping. Perfect for breakfast or as a snack, this moist and flavorful bread is sure to become a favorite.

Dry Ingredients:

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet Ingredients:

  • 1/4 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe cantaloupe (or honeydew melon)
  • 1/2 cup buttermilk
  • 1/2 cup chopped walnuts or pecans (optional)

For Topping:

  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F and grease a 9×5-inch loaf pan.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Mix Wet Ingredients: In a large bowl, cream butter and sugar, beat in eggs and vanilla. Stir in cantaloupe and buttermilk.
  4. Combine and Bake: Gradually add dry ingredients to wet mixture, fold in nuts, pour into pan. Mix brown sugar and cinnamon for topping, sprinkle over batter. Bake for 55-65 minutes.
  5. Cool and Serve: Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Honeydew melon can be used as a variation.
  • For added sweetness, drizzle with a powdered sugar and milk glaze after cooling.
