Waffle Batter

Instructions
- Prepare Dry Ingredients. In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Make a well in the center of the dry mixture and set aside for later.
- Mix Wet Ingredients. In a separate bowl, whisk the eggs, buttermilk, vegetable oil, and vanilla extract until thoroughly combined. Pour this mixture into the well made in the dry ingredients and stir gently until just moistened. The batter will remain slightly lumpy, which is ideal for tender waffles.
- Cook Waffles. Preheat your waffle iron and spray it with nonstick cooking spray. Pour the batter onto the waffle iron grid, close the lid, and cook until the waffles are golden brown and cooked through. Use a fork to carefully remove the waffles without breaking them. Repeat this process with the remaining batter, keeping the finished waffles warm in a 200°F oven.
- Prepare Cinnamon Topping. In a medium bowl, combine the melted butter, brown sugar, and ground cinnamon. Stir well until fully mixed. Transfer this cinnamon-sugar mixture into a small resealable plastic baggie for easy drizzling over the waffles later.
