Ingredients
Scale
Cornbread Waffle Bites:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1¼ cups buttermilk
- 2 large eggs
- ¼ cup melted butter
- 1 cup shredded smoked gouda cheese
- honey for drizzling
- chopped chives or thyme for garnish (optional)
- nonstick spray or oil for waffle iron
Instructions
- Preheat the Waffle Iron: Preheat your waffle iron and lightly grease it with nonstick spray or oil.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, eggs, and melted butter. Pour the wet ingredients into the dry and stir just until combined. Fold in the shredded smoked gouda.
- Cook Waffle Bites: Spoon small amounts of batter into each section of the waffle iron to make mini waffle bites. Cook until golden and crisp, about 3 to 4 minutes. Transfer cooked waffles to a wire rack to keep them crisp while finishing the batch.
- Serve: Drizzle warm waffle bites with honey just before serving and sprinkle with fresh herbs if desired. Serve immediately.
Notes
- For a spicy kick, add a pinch of cayenne or finely chopped jalapeños to the batter.
- These bites pair beautifully with fried chicken or can be served as a unique appetizer.
