Wet Ingredients
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/4 cup honey
- 1 teaspoon vanilla extract

Instructions
- Prepare the Muffin Tin: Lightly grease a muffin tin with cooking spray or butter, or line it with paper liners to prevent sticking and make removal easier.
- Melt Butter and Mix Sweeteners: In a large saucepan over medium heat, melt the butter. Add granulated sugar and honey, stirring constantly until the mixture gently bubbles and the sugar fully dissolves.
- Add Flavorings and Marshmallows: Remove the saucepan from heat. Stir in vanilla extract and salt, then add mini marshmallows. Continue stirring until the marshmallows melt completely and the mixture becomes smooth.
- Combine with Cornflakes: Pour the cornflake cereal into a large mixing bowl. Immediately pour the warm marshmallow mixture over the cornflakes. Gently fold the mixture until all cornflakes are coated evenly.
- Add Chocolate Chips (Optional): If desired, fold in the chocolate chips to distribute them throughout the mixture evenly.
- Shape the Cakes: Spoon the mixture into the prepared muffin tin compartments, pressing lightly to shape into compact cups.
- Set the Cakes: Let the cornflake cakes cool at room temperature for about 1 hour until fully set and firm.
- Serve and Store: Once set, remove from the muffin tin and serve. Store any leftovers in an airtight container for up to 3 days to maintain freshness.
