These Cowboy Butter Steak Sliders are a delicious twist on classic sliders, featuring thinly sliced steak smothered in flavorful cowboy butter and melted cheese, all sandwiched between soft Hawaiian rolls. Perfect for parties or a hearty appetizer!

For the steak sliders:
- 1 ½ pounds flank steak or ribeye, thinly sliced
- 12 slider buns or Hawaiian rolls
- 2 tablespoons olive oil
- Salt and black pepper to taste
For the cowboy butter:
- ½ cup unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon smoked paprika
- ½ teaspoon crushed red pepper flakes
- ½ teaspoon salt
- ¼ teaspoon black pepper
For serving:
- Sliced provolone or cheddar cheese
- Optional: sautéed onions or pickled jalapeños
Instructions
- Preheat oven to 350°F. In a small bowl, whisk together all cowboy butter ingredients. Set aside.
- Heat olive oil in a skillet over medium-high heat. Season the steak with salt and pepper, then sear in batches for 2–3 minutes per side, or until browned and cooked to desired doneness. Set aside.
- Place the bottom halves of the slider buns in a 9×13-inch baking dish. Layer with steak slices and cheese, then cover with the top halves of the buns. Brush the tops generously with cowboy butter.
- Cover loosely with foil and bake for 10–12 minutes. Remove foil and bake an additional 3–5 minutes until golden and melty. Serve warm with extra cowboy butter for dipping if desired.
Notes
- To save time, use deli-sliced roast beef and reheat in a pan with some cowboy butter.
