Description

Cowboy Caviar is a vibrant, fresh, and zesty salad packed with diced tomatoes, bell peppers, onions, jalapeños, avocado, corn, black beans, and cilantro. Tossed in a tangy lime juice and light Italian dressing with garlic and sea salt, this no-cook recipe is perfect as a snack with tortilla chips or a side dish for any meal. It offers a colorful blend of flavors and textures, ready in just 30 minutes to brighten up your table.

Ingredients

Scale

Vegetables and Beans

  • 6 Roma tomatoes, diced
  • 1 bell pepper (any color), seeded and diced
  • 1 medium onion, finely diced
  • 2 jalapeño peppers, seeded and finely diced
  • 1 large avocado, peeled, pitted, and diced
  • 15 oz can of corn, drained (or corn from 1 cooked cob)
  • 15 oz can of black beans, well rinsed and drained
  • 1/2 bunch of cilantro, chopped (about 1/2 cup)

Dressing and Seasonings

  • 3–4 tablespoons lime juice
  • 1/2 cup light Italian dressing
  • 4 medium garlic cloves, pressed
  • 1 teaspoon sea salt, or to taste

Instructions

  1. Combine Vegetables and Beans: In a large mixing bowl, add the diced tomatoes, onion, bell pepper, jalapeño peppers, avocado, drained corn, rinsed black beans, and chopped cilantro. Stir gently to combine the fresh ingredients.
  2. Add Dressing and Seasonings: Pour in the lime juice and light Italian dressing, then add the pressed garlic cloves and sea salt. Mix everything thoroughly until all the ingredients are evenly coated with the dressing.
  3. Let Flavors Meld: Cover the bowl and allow the mixture to sit for at least 30 minutes. This resting time helps the fresh flavors blend and intensify.
  4. Serve: Serve your Cowboy Caviar chilled or at room temperature. It pairs beautifully with tortilla chips as a dip, or can be served as a flavorful side salad alongside your favorite dishes.

Notes

  • For extra zest, leave some seeds in the jalapeño if you prefer more heat.
  • If you want a smoother consistency, you can pulse the salad briefly in a food processor, but traditionally it’s served chunky.
  • This dish keeps well in the refrigerator for up to 2 days, but avocado may brown – add avocado just before serving if preferred.
  • Feel free to substitute canned black beans with fresh cooked ones for better texture.
  • Add a pinch of cumin or chili powder to the dressing for a smoky twist.
