Description
Creamed Chipped Beef on Toast is a classic American comfort food dish, also known as ‘SOS’ in military slang. Creamy, savory dried beef in a rich white sauce served over crispy toast – a hearty and satisfying meal.
Ingredients
Scale
Dried Beef:
- 8 ounces dried beef (sliced into strips)
White Sauce:
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 1/2 cups whole milk
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground nutmeg (optional)
For Serving:
- 4–6 slices of white or sourdough bread (toasted)
- Chopped parsley for garnish (optional)
Instructions
- Making the White Sauce: In a medium saucepan over medium heat, melt the butter. Add the flour and whisk continuously for 1–2 minutes to form a roux.
- Slowly whisk in the milk, stirring constantly to avoid lumps. Cook the mixture for 3–5 minutes until it thickens.
- Add the sliced dried beef and stir to combine. Reduce heat and simmer for another 2–3 minutes, allowing the flavors to meld.
- Season with black pepper and nutmeg, if using.
- Toast the bread slices and place them on plates. Spoon the creamed beef mixture generously over the toast.
- Garnish with chopped parsley if desired, and serve warm.
Notes
- For a richer flavor, use half-and-half instead of milk.
- If the dried beef is too salty, rinse it under cold water and pat dry before slicing.
- This dish is sometimes known as “SOS” and is a nostalgic comfort food classic.
