For the chicken:
- 1 pound boneless, skinless chicken breasts or thighs
For the spaghetti:
- 8 ounces uncooked spaghetti (broken in half)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
- 1/2 cup chicken broth
- 1/2 cup sour cream
- 1/2 cup cream cheese (softened)
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Prepare the chicken: Place the chicken in the bottom of the crockpot.
- Mix the sauce: In a bowl, combine cream of chicken soup, diced tomatoes, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Pour over the chicken.
- Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is cooked.
- Shred chicken: Remove chicken, shred, and return to crockpot.
- Add cheeses: Stir in sour cream, cream cheese, and cheddar cheese until melted.
- Cook pasta: Add uncooked spaghetti, stir to combine, cover, and cook on high for 30-40 minutes until pasta is tender.
- Serve: Garnish with parsley and serve hot.
