For the chicken:

  • 1 pound boneless, skinless chicken breasts or thighs

For the spaghetti:

  • 8 ounces uncooked spaghetti (broken in half)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1/2 cup cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Prepare the chicken: Place the chicken in the bottom of the crockpot.
  2. Mix the sauce: In a bowl, combine cream of chicken soup, diced tomatoes, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Pour over the chicken.
  3. Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is cooked.
  4. Shred chicken: Remove chicken, shred, and return to crockpot.
  5. Add cheeses: Stir in sour cream, cream cheese, and cheddar cheese until melted.
  6. Cook pasta: Add uncooked spaghetti, stir to combine, cover, and cook on high for 30-40 minutes until pasta is tender.
  7. Serve: Garnish with parsley and serve hot.
