Chicken:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into chunks
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Rice:

  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup basmati rice, rinsed and drained
  • 2¼ cups chicken broth

Cream Sauce:

  • ½ cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese (optional)
  • chopped fresh parsley, for garnish

Instructions

  1. Cook Chicken: In a skillet, cook chicken in olive oil until golden. Remove.
  2. Sauté Aromatics: Sauté onion, garlic. Add rice and cook.
  3. Cook Rice: Add broth, herbs, chicken. Simmer covered until rice is tender.
  4. Finish: Stir in cream, Parmesan. Simmer until creamy. Garnish and serve.

  • To lighten, use half-and-half or whole milk instead of heavy cream.
