Pasta:

  • 12 oz pasta of choice (rigatoni, penne, or fettuccine)

Sauce:

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 jar (16 oz) roasted red peppers, drained and chopped
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

To Serve:

  • 8 oz burrata cheese
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons fresh parsley, chopped
  • Zest of 1 lemon

Instructions

  1. Cook the Pasta: Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Prepare the Sauce: In a skillet, sauté onion and garlic. Add red peppers, puree in a blender, then return to skillet. Stir in cream, Parmesan, salt, and pepper. Simmer and add pasta water as needed.
  3. Combine and Serve: Toss cooked pasta in the sauce. Serve topped with torn burrata, basil, parsley, and lemon zest.
