Pasta:
- 12 oz pasta of choice (rigatoni, penne, or fettuccine)
Sauce:
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 jar (16 oz) roasted red peppers, drained and chopped
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
To Serve:
- 8 oz burrata cheese
- 1/4 cup fresh basil leaves, torn
- 2 tablespoons fresh parsley, chopped
- Zest of 1 lemon
Instructions
- Cook the Pasta: Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
- Prepare the Sauce: In a skillet, sauté onion and garlic. Add red peppers, puree in a blender, then return to skillet. Stir in cream, Parmesan, salt, and pepper. Simmer and add pasta water as needed.
- Combine and Serve: Toss cooked pasta in the sauce. Serve topped with torn burrata, basil, parsley, and lemon zest.

- For a smokier flavor, add 1/2 teaspoon smoked paprika to the sauce.
