- 1 cup heavy cream
- 1 tablespoon vanilla bean paste or pure vanilla extract

- 1/4 cup granulated sugar (for brûlée crust)
Instructions
- Preheat the oven: Preheat the oven to 325°F (160°C) and line the bottom of a 9-inch springform pan with parchment paper.
- Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter, press into the pan, and bake for 10 minutes. Let cool.
- Make the filling: Beat cream cheese until smooth. Add sugar, eggs, heavy cream, vanilla, and salt. Pour over crust.
- Bake: Place the pan in a water bath, bake for 60-70 minutes, then cool in the oven.
- Chill: Refrigerate for at least 4 hours or overnight.
- Caramelize the top: Sprinkle sugar over the cheesecake and torch until golden. Let cool before serving.
