Chicken Soup:

  • 3 garlic cloves (minced)
  • 1–2 chipotle peppers in adobo sauce (minced)
  • 1 tablespoon adobo sauce (from the can)
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Add all Chicken Soup ingredients: Place chicken, tomatoes, black beans, corn, onion, garlic, chipotle peppers, adobo sauce, chicken broth, cumin, chili powder, paprika, oregano, salt, and pepper in the crockpot. Stir to combine.
  2. Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  3. Shred chicken: Remove chicken, shred with forks, then return it to the soup.
  4. Season and serve: Stir in lime juice, adjust seasoning, and serve hot garnished with cilantro.
