Chicken Soup:

- 1–2 chipotle peppers in adobo sauce (minced)
- 1 tablespoon adobo sauce (from the can)
- 4 cups low-sodium chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- Juice of 1 lime
- Chopped fresh cilantro (for garnish)
Instructions
- Add all Chicken Soup ingredients: Place chicken, tomatoes, black beans, corn, onion, garlic, chipotle peppers, adobo sauce, chicken broth, cumin, chili powder, paprika, oregano, salt, and pepper in the crockpot. Stir to combine.
- Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
- Shred chicken: Remove chicken, shred with forks, then return it to the soup.
- Season and serve: Stir in lime juice, adjust seasoning, and serve hot garnished with cilantro.
