Chocolate Topping
- 4 ounces dark chocolate, chopped
- 1/4 teaspoon flaky sea salt for topping

- Prepare the Pan: Line an 8×8-inch baking pan with parchment paper to prevent sticking and make removal easy.
- Make the Nut Mixture: In a food processor, combine the chopped mixed nuts, pitted dates, shredded coconut, almond butter, vanilla extract, and 1/4 teaspoon sea salt. Pulse until the mixture comes together, forming a sticky and cohesive dough that holds when pressed.
- Press the Base: Transfer the nut mixture into the prepared pan and use your hands or a spatula to press it evenly into the bottom, forming a compact base layer.
- Melt the Chocolate: Melt the dark chocolate gently by placing it in a heatproof bowl over simmering water (double boiler) or microwave it in 30-second intervals, stirring between each until smooth and fully melted.
- Assemble the Bars: Pour the melted chocolate over the nut base, spreading it evenly with a spatula to cover the entire surface. Sprinkle the flaky sea salt evenly over the chocolate before it sets.
