Description

These Dark Chocolate Sea Salt Nut Bars are a delicious and healthy no-bake treat combining crunchy mixed nuts, sweet dates, and smooth dark chocolate topped with a sprinkle of flaky sea salt. Perfect as a satisfying snack or dessert, they offer a delightful balance of sweet, salty, and nutty flavors with wholesome ingredients that you can make quickly and refrigerate to set.

Ingredients

Scale

Nut Base

  • 1 1/2 cups mixed nuts (almonds, cashews, pecans), roughly chopped
  • 1 cup pitted dates
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup almond butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Chocolate Topping

  • 4 ounces dark chocolate, chopped
  • 1/4 teaspoon flaky sea salt for topping

Instructions

  1. Prepare the Pan: Line an 8×8-inch baking pan with parchment paper to prevent sticking and make removal easy.
  2. Make the Nut Mixture: In a food processor, combine the chopped mixed nuts, pitted dates, shredded coconut, almond butter, vanilla extract, and 1/4 teaspoon sea salt. Pulse until the mixture comes together, forming a sticky and cohesive dough that holds when pressed.
  3. Press the Base: Transfer the nut mixture into the prepared pan and use your hands or a spatula to press it evenly into the bottom, forming a compact base layer.
  4. Melt the Chocolate: Melt the dark chocolate gently by placing it in a heatproof bowl over simmering water (double boiler) or microwave it in 30-second intervals, stirring between each until smooth and fully melted.
  5. Assemble the Bars: Pour the melted chocolate over the nut base, spreading it evenly with a spatula to cover the entire surface. Sprinkle the flaky sea salt evenly over the chocolate before it sets.
  6. Chill to Set: Place the pan in the refrigerator for at least 2 hours to allow the bars to firm up completely.
  7. Cut and Serve: Once set, use the parchment paper to lift the block out of the pan and cut into 12 bars. Enjoy immediately or store as directed.

Notes

  • You can customize these bars by using any combination of nuts or adding seeds like pumpkin or sunflower seeds for extra texture.
  • For a sweeter touch, drizzle a little honey over the chocolate before chilling.
  • Store the bars in an airtight container in the refrigerator for up to 1 week to keep them fresh.
