Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- Mix dry ingredients: In a large bowl, whisk together the flour, sugar, poppy seeds, lemon zest, baking powder, baking soda, and salt.
- Combine wet ingredients: In another bowl, whisk together the buttermilk, oil, eggs, lemon juice, and vanilla extract until well combined.
- Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir gently until just combined—do not overmix.
- Bake: Divide the batter among muffin cups and bake for 16–18 minutes until a toothpick inserted comes out clean.
- Cool and glaze: Cool muffins in the pan, then drizzle with glaze if desired.

- For extra brightness, add an extra teaspoon of lemon zest to the batter.
