- 1 small onion, diced
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1 bag (9.75 oz) nacho cheese Doritos, slightly crushed
For Garnish (optional):
- Chopped cilantro
- Diced tomatoes
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Cook the beef: In a large skillet over medium heat, cook the ground beef and diced onion until browned. Drain excess grease.
- Season the beef: Stir in taco seasoning and water, simmer for 2–3 minutes.
- Add ingredients: Mix in diced tomatoes, cream of chicken soup, sour cream, and 1 cup of cheese.
- Layer the casserole: Spread crushed Doritos in the baking dish, add meat mixture, repeat layers, and top with remaining cheese.
- Bake: Bake for 25–30 minutes until bubbly and cheese is melted.
- Serve: Let it rest for 5 minutes, garnish with cilantro and tomatoes if desired.
