  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (9.75 oz) nacho cheese Doritos, slightly crushed

For Garnish (optional):

  • Chopped cilantro
  • Diced tomatoes

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the beef: In a large skillet over medium heat, cook the ground beef and diced onion until browned. Drain excess grease.
  3. Season the beef: Stir in taco seasoning and water, simmer for 2–3 minutes.
  4. Add ingredients: Mix in diced tomatoes, cream of chicken soup, sour cream, and 1 cup of cheese.
  5. Layer the casserole: Spread crushed Doritos in the baking dish, add meat mixture, repeat layers, and top with remaining cheese.
  6. Bake: Bake for 25–30 minutes until bubbly and cheese is melted.
