- 10–12 fresh curry leaves
- 1/4 cup roasted peanuts or cashews
- 1/2 teaspoon salt (or to taste)

- 2 tablespoons fresh cilantro (chopped, for garnish)
Instructions
- Heat Oil: In a large skillet or wok, heat oil or ghee over medium heat. Add mustard seeds and let them pop for about 30 seconds.
- Add Spices: Stir in turmeric powder, dried red chilies, curry leaves, and peanuts or cashews. Sauté for 1–2 minutes until nuts are golden and spices are fragrant.
- Combine Rice: Add cooked rice and salt, tossing gently to coat the rice evenly with the spiced oil.
- Finish: Remove from heat and stir in fresh lemon juice. Mix well. Garnish with cilantro and serve warm.

- For extra flavor, add a chopped green chili along with the curry leaves.
