  • 2 tablespoons vegetable oil or ghee

Spices and Seasonings:

  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 12 dried red chilies
  • 1012 fresh curry leaves
  • 1/4 cup roasted peanuts or cashews
  • 1/2 teaspoon salt (or to taste)
  • juice of 1 large lemon (about 3 tablespoons)
  • 2 tablespoons fresh cilantro (chopped, for garnish)

Instructions

  1. Heat Oil: In a large skillet or wok, heat oil or ghee over medium heat. Add mustard seeds and let them pop for about 30 seconds.
  2. Add Spices: Stir in turmeric powder, dried red chilies, curry leaves, and peanuts or cashews. Sauté for 1–2 minutes until nuts are golden and spices are fragrant.
  3. Combine Rice: Add cooked rice and salt, tossing gently to coat the rice evenly with the spiced oil.
  4. Finish: Remove from heat and stir in fresh lemon juice. Mix well. Garnish with cilantro and serve warm.
