Description

Wet Ingredients:

  • 2 large eggs
  • ½ cup milk

  • 1½ cups corn kernels (fresh, canned, or frozen and thawed)
  • ¼ cup chopped green onions or chives
  • ½ cup shredded cheddar cheese (optional)
  • Vegetable oil, for frying

Instructions

  1. Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  2. Wet Ingredients: In a separate bowl, beat the eggs and milk together until well combined. Pour the wet ingredients into the dry and stir until just combined — do not overmix.

    Fold in the corn, green onions, and shredded cheese if using.

  3. Cooking: Heat about 2 tablespoons of vegetable oil in a large skillet over medium heat. Scoop about 2 tablespoons of batter for each fritter into the pan, flattening slightly with the back of a spoon. Cook for 2–3 minutes per side, or until golden brown and crisp. Work in batches, adding more oil as needed.
  4. Serving: Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Serve warm, optionally topped with sour cream, hot sauce, or a sprinkle of fresh herbs.
