These Easy Corn Fritters are a crispy and flavorful treat that can be enjoyed as a side dish, appetizer, or even for brunch. Packed with sweet corn, savory green onions, and optional melted cheddar cheese, these fritters are a crowd-pleaser for any occasion.
Ingredients
Dry Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Wet Ingredients:
- 2 large eggs
- ½ cup milk
Add-ins:
- 1½ cups corn kernels (fresh, canned, or frozen and thawed)
- ¼ cup chopped green onions or chives
- ½ cup shredded cheddar cheese (optional)
- Vegetable oil, for frying
Instructions
- Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and pepper.
- Cooking: Heat about 2 tablespoons of vegetable oil in a large skillet over medium heat. Scoop about 2 tablespoons of batter for each fritter into the pan, flattening slightly with the back of a spoon. Cook for 2–3 minutes per side, or until golden brown and crisp. Work in batches, adding more oil as needed.
- Serving: Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Serve warm, optionally topped with sour cream, hot sauce, or a sprinkle of fresh herbs.
Wet Ingredients: In a separate bowl, beat the eggs and milk together until well combined. Pour the wet ingredients into the dry and stir until just combined — do not overmix.
Fold in the corn, green onions, and shredded cheese if using.
Notes
- For extra crunch, add a tablespoon of cornmeal to the batter.
- These fritters are great as a side dish, appetizer, or even for brunch.
- Leftovers can be reheated in a skillet or air fryer.
