- 1 (15 oz) can chili beans, undrained
- 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
Layers:
- 2 cups shredded cheddar cheese
- 4 cups Fritos corn chips, divided
- Chopped green onions, sour cream, and jalapeños for topping (optional)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C).
- Cook Ground Beef: In a skillet over medium heat, cook ground beef and onion in olive oil until browned; add garlic, taco seasoning, chili beans, and Rotel tomatoes.
- Layer Casserole: In a 9×13-inch dish, layer Fritos, beef mixture, and cheese. Repeat layers and bake for 15–20 minutes.
- Serve: Let rest for 5 minutes before serving. Top with green onions, sour cream, and jalapeños if desired.

- You can substitute chili beans with black beans or kidney beans.
