For the Chicken and Potatoes:
- 4 boneless skinless chicken breasts
- 1 1/2 pounds baby potatoes, halved
- 3 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped for garnish

Instructions
- Preheat the oven: Preheat oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
- Prepare the potatoes: In a large bowl, toss potatoes with 2 tablespoons olive oil, 1/2 tablespoon Italian seasoning, garlic powder, paprika, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread potatoes evenly in the baking dish.
- Season the chicken: Drizzle chicken breasts with remaining olive oil and season with the rest of the Italian seasoning, salt, and pepper. Nestle chicken on top of the potatoes.
