For the Chicken and Potatoes:

  • 4 boneless skinless chicken breasts
  • 1 1/2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped for garnish
  • lemon wedges for serving

Instructions

  1. Preheat the oven: Preheat oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
  2. Prepare the potatoes: In a large bowl, toss potatoes with 2 tablespoons olive oil, 1/2 tablespoon Italian seasoning, garlic powder, paprika, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread potatoes evenly in the baking dish.
  3. Season the chicken: Drizzle chicken breasts with remaining olive oil and season with the rest of the Italian seasoning, salt, and pepper. Nestle chicken on top of the potatoes.
