Marinade:
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 2 tablespoons orange juice
- 3 garlic cloves (minced)
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for heat)
Chicken:
- 1 1/2 pounds boneless, skinless chicken breasts or thighs
Instructions
- Mix Marinade: In a medium bowl, whisk together olive oil, lime juice, orange juice, garlic, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne if using.
- Marinate Chicken: Place chicken in a large resealable plastic bag or shallow dish and pour marinade over the top. Seal or cover, and refrigerate for at least 30 minutes or up to 8 hours.
- Cook Chicken: Remove chicken from marinade and grill, bake, or pan-sear until the internal temperature reaches 165°F (74°C).
- Finish: Discard used marinade.
Notes
- For maximum flavor, marinate overnight.
- This marinade also works well for shrimp or vegetables.
