For the Orange Curd:

  • 1 tablespoon orange zest
  • ½ cup granulated sugar
  • 2 large eggs
  • 4 tablespoons unsalted butter, cubed
  • Pinch of salt

Instructions

  1. In a small saucepan over medium-low heat, whisk together the orange juice, zest, sugar, eggs, and salt until smooth.
  2. Add the butter and cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 8–10 minutes. Do not let it boil.
  3. Once thickened, remove from heat and strain the curd through a fine mesh sieve into a clean bowl to remove zest and any cooked egg bits.
  4. Let cool to room temperature, then transfer to a jar or airtight container. Chill in the refrigerator for at least 1 hour before using.
