Salmon Patties:
- 1 (14.75 oz) can pink salmon (drained, bones and skin removed)
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 2 large eggs
- 1/2 cup breadcrumbs or crushed saltine crackers
- 1 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1/2 tsp Old Bay seasoning
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 2–3 tbsp vegetable oil (for frying)
For Serving:
- lemon wedges
- fresh parsley for garnish (optional)
Instructions
- Mix Ingredients: In a medium bowl, combine the salmon, onion, green pepper, eggs, breadcrumbs, mayonnaise, mustard, Old Bay seasoning, garlic powder, and black pepper. Mix until well combined.
- Shape Patties: Use your hands or a scoop to shape the mixture into 6–8 patties.
- Fry Patties: Heat the oil in a skillet over medium heat. Fry the patties for 3–4 minutes per side, or until golden brown and crispy.
- Drain and Serve: Transfer to a paper towel-lined plate to drain excess oil. Serve warm with lemon wedges and garnish with parsley if desired.
Notes
- You can substitute canned salmon with fresh cooked salmon.
- For added flavor, stir in a dash of hot sauce or chopped green onions.
- These patties are excellent with grits, salad, or on a sandwich.
