Description

These Southern Salmon Croquettes are crispy, flavorful, and easy to make. Perfect for a quick weeknight dinner or a delicious lunch. Using canned salmon and simple ingredients, these fried salmon patties are a classic Southern favorite.

Salmon Patties:

  • 1 (14.75 oz) can pink salmon (drained, bones and skin removed)
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 2 large eggs
  • 1/2 cup breadcrumbs or crushed saltine crackers
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp Old Bay seasoning
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 23 tbsp vegetable oil (for frying)

For Serving:

  • lemon wedges
  • fresh parsley for garnish (optional)

Instructions

  1. Mix Ingredients: In a medium bowl, combine the salmon, onion, green pepper, eggs, breadcrumbs, mayonnaise, mustard, Old Bay seasoning, garlic powder, and black pepper. Mix until well combined.
  2. Shape Patties: Use your hands or a scoop to shape the mixture into 6–8 patties.
  3. Fry Patties: Heat the oil in a skillet over medium heat. Fry the patties for 3–4 minutes per side, or until golden brown and crispy.
  4. Drain and Serve: Transfer to a paper towel-lined plate to drain excess oil. Serve warm with lemon wedges and garnish with parsley if desired.

Notes

  • You can substitute canned salmon with fresh cooked salmon.
  • For added flavor, stir in a dash of hot sauce or chopped green onions.
  • These patties are excellent with grits, salad, or on a sandwich.
