Cookie Batter:
- 2 large egg whites

- 1 pinch salt
- 2 tablespoons water

- Small paper fortunes (about 2.5 inches long)
Instructions
- Preheat the oven: Preheat the oven to 375°F and line a baking sheet with a silicone mat or parchment paper.
- Mix egg whites and sugar: In a medium bowl, whisk the egg whites and sugar until frothy and slightly thickened.
- Add flavors and flour: Whisk in melted butter, almond extract, vanilla extract, and water. Stir in flour and salt until smooth.
- Bake: Drop 1 tablespoon of batter onto the baking sheet, spread into a thin circle, and bake for 7–8 minutes.
- Add fortunes: Quickly place a fortune in the center of each cookie, fold in half, and shape into fortune cookie form.
- Cool and store: Place shaped cookies in a muffin tin to cool and store in an airtight container.
