Instructions
- Cook the beef mixture: In a large skillet over medium heat, cook the ground beef with the chopped onion and minced garlic until the beef is browned and the onions are soft. Drain any excess fat to keep the mixture from being greasy.
- Add beans and seasonings: Stir in the black beans, pinto beans, cooked rice, chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook the mixture for 3 to 4 minutes until everything is heated through and well combined. Remove from heat and allow it to cool slightly.
- Assemble the burritos: Lay one flour tortilla flat on a clean surface. Spoon about 1/2 cup of the beef and bean mixture onto the center of the tortilla. Top with shredded cheddar cheese and a spoonful of salsa.
- Roll the burritos: Fold the sides of the tortilla inward, then roll tightly from the bottom to form a burrito. Repeat the process with the remaining tortillas and filling.
- Wrap for freezing: Wrap each burrito individually in foil or plastic wrap to prevent freezer burn and for easy storage.
