For the Chicken:
- 1 1/2 lbs boneless skinless chicken breasts
- 3 tablespoons olive oil
- juice of 1 lemon
- 3 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For Serving:
- 4 pita breads
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup sliced red onion
- 1 cup tzatziki sauce
Instructions
- Marinate the Chicken: In a medium bowl, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, cumin, salt, and pepper. Add chicken, toss to coat, cover, and refrigerate for at least 30 minutes.
- Grill the Chicken: Preheat a grill pan or outdoor grill to medium-high heat. Cook chicken for 5 to 6 minutes per side or until fully cooked (165°F internal temperature). Let chicken rest for 5 minutes, then slice thinly.
- Assemble the Gyros: Warm pita bread on the grill. Layer lettuce, tomatoes, red onion, and sliced chicken onto each pita. Drizzle with tzatziki sauce, fold, and serve.
Notes
- For a more authentic flavor, marinate chicken overnight.
- You can use boneless chicken thighs for juicier gyros.
