Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease.
- Mix wet ingredients: In a bowl, whisk together Greek yogurt, eggs, honey/maple syrup, and vanilla.
- Combine dry ingredients: In another bowl, mix flour, protein powder, baking powder, baking soda, salt, and cinnamon.
- Combine wet and dry: Add dry ingredients to wet mixture, then stir in milk until smooth. Fold in optional ingredients.
- Bake: Divide batter into muffin cups and bake for 18–22 minutes until a toothpick comes out clean.
- Cool: Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
